Basic Pancake

Ingredients for four pancakes

  • 1 cup unbleached, regular flour (not self-rising) or whole wheat
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp melted butter (a minute in medium power microwave)
  • 3/4 cup of milk, but reserve more in case you need it
  • 1 egg
  • best syrup you can find


  1. if using a heavy griddle, set it on medium before starting the preparation
  2. mix the dry ingredients in a bowl
  3. mix the liquid ingredients together
  4. pour the dry mix into the liquid mix
  5. swirl just a few times until the dry ingredients are wet, but not more! If it’s too thick, add more milk, but should not be liquidy
  6. Wait 5 minutes, if you can, until bubbles start showing on the surface
  7. ladle the mixture into a pan on medium heat
  8. turn when bubbles form and some are starting to pop
  9. remove from pan after the other side is brown (about half a minute)
  10. serve with warm maple syrup

Serves 2


  • If using blueberries, fresh or frozen (not thawed), stir them in the batter before using, but cook more slowly to avoid burning.
  • You can make it fluffier by using 1/4 tsp baking soda and 1/8 tsp baking powder instead of 1 tsp baking powder, AND something acidic like 1 Tbsp lemon juice. This method requires that you let it sit for just five minutes and then cook it immediately.
