Basic Caramel Syrup

From Penelope Casas’ “¡Delicioso!” and the Portuguese cookbook

Ingredients

  • 1 cup of sugar
  • 1 cup of boiling water

Preparation

  1. put in half the water in the sugar in a small pot, heat on high
  2. when the mixture turns golden brown, slowly and carefully pour the rest of the hot water in, one teaspoon at a time
  3. Let it simmer until it resembles maple syrup in color and texture
  4. use immediately.
