From Penelope Casas’ “¡Delicioso!” and the Portuguese cookbook
- 1 cup of sugar
- 1 cup of boiling water
- put in half the water in the sugar in a small pot, heat on high
- when the mixture turns golden brown, slowly and carefully pour the rest of the hot water in, one teaspoon at a time
- Let it simmer until it resembles maple syrup in color and texture
- use immediately.
