Cream Cookies of La Gomera

From Casa’s “¡Delicioso!”

  • 12 Tbsp unsalted butter
  • 2 egg yolk
  • 1/2 cup sugar
  • 1 tsp grated lemon zest
  • 4 Tbsp heavy cream
  • 1/2 tsp cinnamon
  • 2 Tbsp flaked coconut
  • 1/4 tsp ground anise
  • 2 cup plus 6 Tbsp flour
  • 1/2 tsp baking soda
  • 2 egg whites, lightly beaten with 1 tsp water
  • granulated sugar for sprinkling


  1. In a bowl cream the butter with an electric mixer
  2. Beat in the egg yolk and sugar
  3. Beat in the lemon zest, cream, cinnamon, coconut, and anise
  4. Sift the flour and baking soda in a small bowl and stir it into the butter mixture to form a smooth dough
  5. Set oven to 350 F
  6. Roll out on a floured surface to 1/4 inch and cut with cookie cutter (2 1/2 in size)
  7. Brush with egg-water mixture and sprinkle with granulated sugar.
  8. (Optionally, you add decorative beads here)
  9. Bake for 15-18 min or well browned

Serves 30 for 2 1/2 in cookies
