Pan di Spagna

Based on Annarita’s recommendation


  • 1 bag pan degli angeli
  • 300 g sugar
  • 300 g flour
  • 10 eggs, separated, whip the white


  1. Beat sugar and yolk until light yellow
  2. whip egg white until firm peaks form
  3. fold whipped white with sugar-yolk mixture
  4. sift flour into mixture while folding it constantly
  5. add the pan degli angeli and fold for two minutes
  6. pour the mixture into a deep 9-inch pan (like a spring form pan)
  7. turn oven on to 325 F, wait two minutes
  8. put mixture in oven (this is into an oven that is just warming up)
