Lemon Flavor Caramel Syrup

From the Portuguese cookbook for Molho de Caramelo


  • ½ cup sugar
  • ½ cup boiling water
  • 1 Tbsp lemon juice
  • 1 Tbsp unsalted butter


  1. Melt sugar in moderately low heat in a small heavy skillet until completely liquefied and rich amber, shaking it from time to time, do not stir! Up to 40 minutes!
  2. Pour in boiling water and lemon juice, will splatter
  3. Let it simmer uncovered over low heat for about 20 min, stir from time to time until liquid again
  4. Add butter and let it simmer, stirring occasionally, until of maple syrup consistency, about 5 min
