Basic Veggie/Fruit Loaf

Ingredients

For 1 full loaf pan

  • 3 cups all-purpose flour 
  • 2 teaspoons baking powder 
  • 1/4 teaspoon baking soda 
  • 2 teaspoons cinnamon 
  • 1/4 teaspoon nutmeg 
  • 1 teaspoon salt 
  • 2/3 cup brown sugar or maple syrup or combination
  • 3 large eggs 
  • 2 tsp vanilla extract
  • 3/4 cup olive oil or canola oil 
  • 1 pound zucchini or apple or carrots or some combination
