Sweet Potato Italian Cheese Cake

Based loosely on this simple recipe from Food.com

Ingredients

Crust

  • 1 3/4 cups graham cracker crumbs
  • 3 tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 stick melted salted butter

Filling

  • 1 (8-ounce) packages cream cheese, at room temperature, cut into half-inch cubes
  • 1.5 lb sweet potatoes
  • 3 eggs plus 1 egg yolk
  • 1 cup mascarpone
  • 1 cup ricotta
  • 1/4 cups sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fresh ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract

Directions

For crust

  1. In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 10-inch springform pan. Set aside.
  2. Optionally, bake the crust for 12-15 min until brown

For filling:

  1. Process the cream cheese until smooth.
  2. Add all the other ingredients and process until smooth
  3. Pour into crust. Spread out evenly and place in oven for 1 hour or when internal temperature reaches 150F.
  4. Remove from the oven and let sit for 15 minutes.
  5. Cover with plastic wrap and refrigerate for 4 hours.
