Corn bread

Modified from a recipe from Parisa and one on Food network,


  • 1-1/2 cups of flour 
  • 1/4 cup of sugar 
  • 1/2 cup of cornmeal 
  • 1 Tbsp baking powder (if using yogurt, reduce and add baking soda)
  •  1/2 tsp.salt
  • 1-1/4 cups of milk, or a combination of milk and yogurt
  • 2 eggs lightly beaten 
  • 1/3 cup of oil 
  • 2 Tbsp melted butter, 1 Tbsp for skillet


  1. Preheat oven to 425F
  2. Place cast iron pan in oven
  3. Combine all dry ingredients
  4. Combine wet ingredients
  5. Mix the two just until no more dry flour
  6. Take pan out and reduce oven temp to 375F
  7. Pour into hot cast iron pan
  8. Bake for 30 min
