Roasted Cha Siu

Based on the BBQ version from woks of life.

Ingredients

  • 3 pounds pork shoulder/pork butt, tied tightly with kitchen twine
  • 1 onion, roughly chopped
  • 2 tablespoons sugar 
  • 1 teaspoon salt 
  • ½ teaspoon five spice powder 
  • 1 teaspoon paprika 
  • ¼ teaspoon white pepper 
  • 1 tablespoon sherry or Chinese plum wine 
  • 1 tablespoon soy sauce 
  • ½ teaspoon sesame oil 
  • 2 teaspoons hoisin sauce 
  • 2 teaspoons tomato paste 
  • 2 teaspoons molasses 
  • 1 tablespoon oil 
  • 3 cloves minced garlic 
  • 1 tablespoon hot water

Directions

  1. Preheat oven to 450 F
  2. Mix together everything but the pork butt and onions
  3. Sear the pork butt on oil all sides in medium heat inside a dutch oven
  4. Add onions
  5. Add the sauce
  6. add enough water/stock to half the height of the pork
  7. Place in preheated oven, covered, turn the temp immediately down to 200 and bake for 3 hours.
